1cup of flour and 1cup of corn starch, add 2 tbl spoons of Old Bay, tsp salt & pepper and whisk to combine. Add 1 can of beer (12oz domestic lager) and mix together to make a batter. Heat deep fryer (or pot with 2-3" of veg oil) to 350*. Dry prepared Blowfish and season meat with S&P before coating with batter and carefully placing in hot oil. Cook for about 4 min till golden brown. My grandkids love it when I cut the meat off the rack and make boneless Blowfish fingers.
