Got a nice local raised simply grazin grass fed beef 3 pound eye round roast that has been salted liberally since last night. Wiped the salt off and pat it try. Pan seared each side on top of stove in a couple tbsp of oil.
Placed ina preheated 225* oven and waiting for it to reach a temp. of 115 internal. I’ll turn off the oven n let it sit until it reaches 130...
