Whats on tonights Menu

So, another of my gifts from Mrs. Avenger was a set of stainless Kabob spears.

We've done this a couple of times. This go-round we used chicken thighs. Harder for me to overcook and I think I finally have a handle on the vegetables.

Yes, I keep everything on its own skewer. My feeling is that meats and vegetables, especially lightweight ones like peppers, don't need the same amount of heat. Chicken OTOH, that needs some heat.

I really don't know what I am doing. 🙁





You know,..... I'm beginning to suspect that these "gifts" have less to do with kitchen adventures than they have to do with: Honey, you should do more of the cooking.... :unsure:
 
Once again, tomorrow night or later's menu.

We picked up some nice big Kirbys from a farm stand in Melville, because we were in the area. **

I thought I had taken a pic of the whole cucumbers, but I guess not. 🙁

The previous lesson was more cucumbers. The other lesson was bigger cukes to make use of the bigger jars.

It's a little challenging to balance the brine between two jars, especially all the chunky ingredients like the Coriander seeds which float and the garlic which doesn't. Next go-round I may make the brine and let it sit on its own for a while for the seasoning to get dispersed in the liquid so I don't have to slop it back and forth between the two jars to get it all evenly mixed.

**BTW, highly recommend Schneider's Farm on Old Country Rd just a little East of White Post Farms. Excellent quality and fair prices.

I don't usually do the produce shopping, so I don't ever remember seeing Kirbys in the supermarket. But I'll be paying more attention in the future.

So far I'm really liking this venture into pickling. For some future experiments I'm going to have to look in to a way to crinkle slice things efficiently. Slicing up all the cucumbers or radishes into chips with the single blade waffle-blade slicer would wear me out.

And a quick look at the innerneck says I'm going to be cutting them by hand.
