Yeah that convo was cut off...I was talking about the Deba knives Japanese chefs use to cut fish. They are like fish cleavers...very heavy blade, chisel ground, and it's a completely different filleting process to the one we're used to. Imo it gives a cleaner final product...
Oil temp is key, I generally just flick a few drops of batter into the oil and if it floats and bubbles right away it's ready. Also, don't crowd the pot, it will lower temperature drastically.
Fish should be as dry as possible. You can also help batter clingage (??) by a light dusting of flour...

Thanks Rick, I must say that Seaguar STS leader impressed me...thing was shaved to hell but held. I had a 6lb tog split 15lb STS into 3 splices but held, very good stuff. Likewise the Decoy jig head was perfectly fine, hook didn't bend at all lol.
