Hey Joe, just watched the youtube video for July 2019 at Tanaku lodge, very awesome stuff. What an incredible way to make a living, those customers were smiling ear to ear! Looking forward to seeing your posts for 2020, Looney out.
The Umai dry ageing bags are purposed for the regular Joe Schmo for at home use, I'm definitely not going to over think this. The videos I've watched are of regular guys using their home refrigerators (usually a 2nd fridge in the basement) for varying lengths to time and showing their results...
It wont be for a couple of months but I'll let you know how it goes. Check out youtube 'dry aging beef', its pretty interesting stuff. To use the Umai bags you'll need a vacuum packer, really looking forward to giving this a shot!
After doing some research I've found that more than a few trains of thought say, in their opinions, there is no significant benefit to aging primal cuts longer than 30-40 days. I have no basis to agree or disagree with this summation but feel 30 days or so is a good enough place to start. I'm...
TonySmjc, thanks for that, I agree it was very interesting. Perhaps trying to save a few bucks on humidification should not be a priority. After all when you consider what we spend to fill your box with tasty, well seasoned cigars taking the best care of them should be my focus. In for a penny...
The pores or construction of the bags allow moisture to pass from to meat to the external environment in the fridge. I couldn't possibly answer if the science accounts for differences in modern day refrigerators however it would be my belief that the majority of residential refrigerators today...
I personally have never tried dry aged beef but after watching a youtube video felt compelled to order Umai dry ageing bags from amazon. I plan on purchasing a primal rib eye cut from Bj's and give it a 30 day rest in my basement fridge. Tentative start date will be March timeframe so April...
Boveda packs seem very convenient, I read that you actually choose the humidity level packet you desire and just pop in one or more (depending the size of your box) and your done. I'm assuming you pay for that convenience. I'm interested in managing my resources so I have more to spend on new...
I read an article regarding kitty litter beads used to humidify your box. It stated that when used in a humidor they worked very well to maintain a 65-70% RH. Curious if anyone here has given it a try? Lord knows the bag you can purchase for 7-10 bucks will certainly last for quite some time.
Awesome response, I feel way more confident with how to approach my issue. My sticks are clean it's only my box with spots of light green mold. I'm going to lightly sand while using vacuum to remove visible mold (being aware cedar may only be veneer), then lightly wipe with isopropyl alcohol a...
Worth a shot, just not convinced wiping it will remove all and not just the visible mold. The box is not totally covered but I thought you had to neutralize it before you reseasoned it.
Has anyone had any experience removing mold from a spanish cedar humidor? Two years ago I over humidified my box to the point where mold began to grow on the wood. I removed it from service but just recently decided to fire it up again. Thing is it seems that mold just doesn't go away. Would...
