    The real key to filleting them is having a super sharp edge on your knife. As others have said, their skin is super thick and tough, no scales...

    I would definitely give it a shot there. I fish for them with the same style rigs I use for porgies or sea bass. Clam on 2/0 - 4/0 bait holders on high low rigs with a bank sinker at the bottom

    I catch them primarily in "the inlet area" of shinnecock as well as out out on the reef. I've heard stories of them being caught near the bridge pilings. Never caught them in the open bay though
