Just finished making and freezing another batch of pesto. While I was doing it a friend called and while were talking about pesto, he told me, "My wife's friend who thinks pine nuts cost too much said you can use walnuts instead."

My instantaneous response was, "Oh sure you can use walnuts, said NO Italian American EVER!!!"

Only acceptable substitution IMO is swapping out the sheep cheese (Pecorino Romano, and ONLY Locatelli imported at Casa Roccus) with cow cheese (Parmigiano Reggiano).
