Marinated skirt steak and cheddar mashed potatoes later today. Pictures may follow if I take the time to do it. I usually get too hungry!

Skirt steak marinated, with cheddar mashed potatoes. I was going to "crown " some tomatoes and basically stuff them with the same filling as spinach pie, top with mozz cheese and baked. Wife decided different, so fresh mozz tomato with EVOO and light black truffle balsamic vinegar.

It came out wonderful.
