I caught one on Thursday and cut it up for strip baits. It had some nice looking firm tail meat and got me tempted LOL

Yes, like a blowfish. You need to keep the bigger ones. It's like a mini pork loin when you filet it. Plenty of YouTube videos on how to filet them.
