Dad would make a Chicken Liver spread on the Holidays to be spread on crackers. I loved it so I would guess that I would love your version. Basic would be chopped fried CL, Mayo, Garlic, chopped Hard Boiled Eggs, and a bit of Mustard. Or there abouts.
