My parents cooked a roast beef every week, they are gone now for years. Never did a roast beef myself and Mary thought today was a perfect day for it and it was.

Cooked it medium well, potatoes and carrots, gravy with the drippings. We both loved it.

Grilled cheese made in a cast iron frying pan.

2 large bunches of Swiss Chard,
separate stems first, wash, cut , cook ahead of greens 2 minutes or so with, onion, garlic / oil… add washed cut greens to pot, ( retain some water ) add some tomatoe , ( your cherry tomatoes look great ) cook until soft… S&P…

have 2 lb container of ricotta ( not polly o , to watery ) some mozzarella for topping or parmesan…. 2 eggs…

let greens cool down,.

1 lb Fusilli cooked,
i favor fusilli over ziti or penne… more surface for sauce to stick on…

mix all together , add to large baking dish, oiled,… 425’ oven till bubbling slows and crisp top, looks good… 40 minutes…

same as classic baked macaroni dish, but instead of tomato sauce , swiss chard rules…

easy peasy, bon appetite’. cell..

hint: before adding oil to the wet onion , garlic sautéing,, let it toast up in a the pot “dry” before adding oil.. this way the wet celery/ garlic won’t go crazy with water and oil splattering… cell…
