DOGFISH, harvesting..

I bet the last few posters eat Beef Liver, oh and it's gotta be cooked right with onions, yum, I mean yuck... cellfish... LoL..

Guilty as charged Cel, liver and onions with bacon is one of my favorites!!! For the record, I've had doggies and they aren't too bad if handled correctly, but if I'm going to have "lesser" fish I'd rather have Norther redfish, bergals, cusk, and sea robins and sculpins

they eat dogfish down here (amongst other things too gruesome to list) - even sell 'em at the fish markets - sold as - wait for it................Fish Steaks

They just cut 'em vertically & there ya have it.

A splash of vinegar in the pan to lift that onion/bacon/liver meatiness...so good. I haven't had liver in years!

Also, I think you must add skate to that list of undesirables lol

I've been too lazy to target skate...but this year I HAVE to catch one and do a video. I just have to get over the thought of winging one off my kayak...blood and guts everywhere...

Skate is very good, I've had it in both French and Chinese versions. Frank at the old wok'n'roll in Montauk used to make into what he called a "chilly" for me. You don't have to take the wings completely off to get the prime filet, but it takes a big skate to get anymore than the equivalent of a sea scallop off of one. To clean one lay it flat on its belly and start working at the backbone with a very sharp knife. Work down the middle of the wing until you get that whole muscle off on one piece. Repeat on the other side and throw the rest away.
