Prime Rib Roast

Hi all, I went to a great Boxing Day party last night. A lot of people and at least 2 ladies came up to tell me how they prepared their rib roast. Yup, both had done it the Hi temp. turn it down or off method and it came out spectacular. So it works. Cooking techniques change all the time. Got to go with what you find works best.
I prepared a prime boneless rib roast that I had removed virtually all the visible fat. I even seammed out the cap and removed the underlying fat as well. I tied it back together and it weighed about 8 pounds. My gf seasoned it with sea salt flakes and fresh ground black pepper. She cooked it by pre-heating the oven 500* and roasted uncovered for 30 minutes. Then turned down the oven to 375*, checked the temp. 50 minutes and it was @ 120*. Took it out (like Chincat did) but didn't cover. Let stand for 20 minutes to let the juices reabsorb and carved. Perfect and it was good!!


Boxing Day.? hey JoeB, me wife and me were in the Carribbean the day after Christmas, everything was closed for the national holiday "BOXING DAY". after asking the locals what was Boxing Day, most didnt know. Would you like to elaborate ... cellfish...

Why do I feel your setting me up for taking a thread off track? I’ll put it this way...if you, cany,crabby,chebby,mojoe,wader,MakoMike,movetheboat,Rocko, was over on Christmas Day carving up my beautiful “RIB ROAST”, smoked ham, turkey and serve it up to my guest. Along with all the cocktails,appetizers and deserts. After you all did the cleaning up, dishes, throwing out the garbage etc. All those leftover meats, pasteries, alcolhol beverages and things that you all “Boxed” up. You’ll take home with you that evening and the next day you all would get together at Cany’s house and open them boxes up and have a celebration chowing down on all the goods. And someone would left their free drink and say HAPPY BOXING DAY!!!

I erased because your erudite and entertaining allegory was a great demonstration of what I was saying. I'm always happy to defer to superior treatises.

Of course if you feel my more plebeian explanation was suitable, here it is again:

Boxing Day is a British/Irish thing. There are multiple theories for the Brits, but #1 is the closest to Joe's story...
  1. The name is a reference to holiday gifts. A ‘Christmas Box’ in Britain is a name for a Christmas present. Boxing Day was traditionally a day off for servants and the day when they received a ‘Christmas Box’ from the master. The servants would also go home on Boxing Day to give ‘Christmas Boxes’ to their families.
  2. The name is a reference to charity drives. A box to collect money for the poor traditionally and placed in Churches on Christmas day and opened the next day - Boxing Day.
  3. The name refers to a nautical tradition. Great sailing ships when setting sail would have a sealed box containing money on board for good luck. Were the voyage a success, the box was given to a priest, opened at Christmas and the contents then given to the poor.
And no one can ever beat the Irish for originality and their disdain for the British so they even renamed the holiday:
In Ireland, Boxing Day is also known as "St. Stephen's Day" named after the Saint stoned to death for believing in Jesus. In Ireland on Boxing, there was once a barbaric act carried out by the so-called "Wren Boys." These boys would dress up and go out, and stone wren birds to death then carry their catch around the town knocking on doors and asking for money, the stoning representing what had happened to St Stephen. This terrible tradition has now stopped, thank goodness, but the Wrens Boys still dress up but instead parade around town and collect money for charity.
 
So if I baked a Devil’s Food Cake to go with my rib roast that what be ok? Cause that’s the only chocolate cake I like. Well maybe a good German Chocolate cake. Grrrrrr, Callie start another thread for holidays already!✊?
 
I know its not traditional but they were on sale last week so we made another Rib Roast for Easter Dinner. same method used for Christmas and came out perfect again!!
