thin flounder filets

besides what few weaks or fluke I take home, we buy a lot of salmon at ShopRite. SWMBO puts a dressing on it and bakes them. Delicious, as good as any restaurant which we always order when dining out. (These implants don't like steak !) But yesterday we decided to buy flounder and these filets are SUPER THIN. I could marinade them in an aluminum foil "canoe" for the grill, or SWMBO could do her salmon thing but any other ideas ? So thin I think the egg and bread crumb thing in the air fryer is a no go. TIA

If it's too thin to roll, modify a "stuffed" flounder by just placing the mixture on top and baking it that way.

Flounder Meunière

Meunière is a classic French dish made with a white fillet of fish, lots of browned butter, fresh lemon and parsley. It's simple + delicious!

Here is one way. And you can look for other recepies under the same name if you are looking for less butter use. But along these ideas. And we use rice, or just over a pile of vegetables.

After I read further, I substitute avocado oil for a more neutral flavor, including a higher flash point. And I use dry white wine too. There might be other names for both, but this gives you some ideas. Experiment and let us know.
