What is your favorite local fish to eat?

Have to agree with you about blue claw crabs. I absolutely love their taste, better than any of the aforementioned fish. However, I absolutely hate cleaning them and when they do latch onto one of my Gulp "baits" I dislodge them as soon as I can and go back to fishing. Of course since 90% of my fishing is done from a yak there is also something about those claws being that close to one's johnson.

Yes, they can be annoying but love what they do to a red sauce.

I find cleaning them easy and almost fun since I think i do it so well
I take my time with them since I know what they are going to do to that sauce.
Then I top the sauce over some pasta and eat an entire huge bowl of those cleaned up crawlers.
