Whats on tonights Menu

Sushi made by my wife and A Claws seafood market feast of grilled salmon and shrimp skewers???

What’s your process for grilling the salmon? Do you use one of those boards?
I've used the cedar planks in the past but sometimes they overwhelm the fish
I used a metal "grill topper" that I put right on top of the grate.
I like keeping skin on which helps keep it moist.
My wife is on charge of the sauces
Pre rub the fish with sauce or seasoning. this time was a soy based mustard sauce.
I place fish on grill topper on indirect heat skin side up so exposed fish side gets crisped/seared.
Flip over to skin side up and then drizzle some more sauce/marinade on it for the last few minutes....
