Godfather: 3 eggs. Salami, grilled onions, peppers, melted provolone on a bagel.

Nice and browned on the edges - you finished it in the oven?

i always start wit onions sautéed in skillet wit a good amount of olive oil… that’s classic, not to be stingy wit olive oil… helps lubricate the sides in a black iron too…

wit slotted spoon, get the cooled down onions into scramble egg bowl w/ veggie, or pieces of ham, grated cheese too…

get the skillet reheated up to temp on stove top, pour eggs into skillet and then into oven @ 350’… 425“ is good too…

some non stick skillet’s are oven proof to 500’, i read they may omit toxic fumes, i think i experienced that elsewhere…

i guess stainless steels pans would work in hot oven, as stove top is preferred by others…
