Higher heat, add bacon fat to butter, 2 minutes each side (put fan on over oven, lots of smoke), 2 minutes in 400 oven remove from pan, spoon pan juice and rest. When I do not want to start the grill, that is what I do.didnt feel like starting up the grill bro
that's actually how Omaha recommends it & most proffesional chefs do good steak - brown/sear it in the pan or quickly on the grill (couple of minutes to sear the meat) - then finish in the oven - pan searing seals in the juices - put it on the grill & you loose a lot of thatWhy wouldnt you grill it?
