Whats on tonights Menu

Snapple : mediterranean stuffing:

bread crumbs, or better yet. leftover italian bread cubed finely.
chopped tomatoes
fresh parsley, garlic, S&P , oregano, rosemary too goes well with eggplant.

olive oil, water to make mix wet…
mix it up,

take eggplant , slice in half, scour boat in crisscross fashion ( try not to break the skin) in order to stuff the stuffing..
in the same bowl with your hands, stuff the stuffing into boat. rinse fingers under running water into bowl ( saving tidbits ). use water to drizzle tidbits and water to moisten boat..

bake 30 minutes covered at 350’ with foil and 15 more uncovered…
