Hi Cell. I always trim the "belly" out and dice the clams. Otherwise the chowder looks muddy. Making clam chowder from fresh clams is a lot of work but it's fun and worth it. Checkout that bowl of delicious clam juice. I begin to steam my clams in very little water and the juice is almost pure clam juice. Except for heavy cream at the end, I only use clam juice.

yes, i make it on occasion, always concerned bout the green & black goook… i always make a tomato based chowder… carrots, celery, onion, potato… cell…
