Grandma Eggplant... LoL ?

Stuffed Eggplant , Ya basically making a stuffing, Italian style...

in a large mixin bowl start with bread crumbs, homemade is best, 2 cups or so...

Parsley, oregano..
Rosemary goes nice with eggplant..
Fresh garlic,
2 tomatoes chop, save juice.
Grated cheese, S&P, 1/4 cup Olive oil, add water to moisten stuffing.

Wash eggplant, ( I hate those glued labels ) cut tops bottom...

Slice in half, ( like a boat ) scour the eggplant with a crisscross pattern so stuffing can be stuffed into boat...

*bring boat into mixing bowl*, and spoon stuff em over bowl, rather than cutting board, and place em into roasting pan,,,

Rinse mixing bowl with 2 cup of water ( save stuffing extra tid bits ) and spoon over boats,,,

Bake at 350’ or so until for 35 minutes, tender and stuffing a little crisp,

Nothing exact here, ok bud., .Appreciate the thought... cellfish...
