2 8oz Prime Filet Mignon
Sear for 3 minutes cast iron pan, flip, and then into the oven at 350 degrees for 12-15 minutes or so....for Medium Rare????

How ya' all do it?

Depends on the thickness vs round. Screaming hot pan, 2 on one side, 2 on the other 3-4 in a 450 oven. Rest 10 minutes OUT of pan. Just make sure they are as close to room temp as possible.

See I usually go rare, but I would hate for that to come out over done.
