Smoking Porgies

Running a bunch of sea bass fillets and some porgies thru the smoker right now
Never figured id run sea bass but weve caught oh so many this year so why not
Plan is to make a big ass bowl of key west style smoked fish dip??

2nd batch from yesterday came out pretty good ?
Today I’m doing the blue fish with the rest of the larger porgy filletsView attachment 33911
Hey , I am a novice smoker and I just did some weakfish and bluefish in a wet brine and it came out good. I noticed in your picture that you have spices on a batch. question...do you do a brine and then put spices on the Fish. I thought it was either one or the other.
