Shrimp wit lobster sauce ?
But I put that whole little cup of hot mustard in it ? I’m having a hard time eating this

My Mom used to make liver once a month or so by simply frying in a cast iron frying pan. Can’t say it was my favorite. :confused: God Bless her she was Irish.
My Mom used to make steak & kidney Pie for my Dad about once a week too. I hated it when I was a kid, I enjoy it now.
 
It’s amazing over time how your palate changes lol. I used to HATE ribeye steaks when I was younger because of all the fat and grizzle. I’d always go for sirloin. Now if I go two weeks without a ribeye I get the shakes lol.
 
my first steak as a bachelor was sirloin, I asked the butcher for a mans steak after work all day and it was a jumbo sirloin... ?
the idea of paper towels is to get the moisture off the top ofda steak ?.
Moisture will steam the meat rather than being seared... cellie... ?
 
Take it out of the plastic package right away when you get home and place on a plate in the fridge...or keep wrapped in the butcher paper. Flip the steak from time to time especially if keeping over night. This allows the moisture of the steak to flow down thru it. Gravity pulls downward... Patting down the steak with paper towel before cooking? Ok, but my salted steak usually absorbs any moisture on top prior to searing.
 
I do 8 minutes per side at 300 degrees in the oven then finish on the grill at 600 degrees for 4 minutes per side.

I take it out the refrigerator and heavily salt it about 3 hours before cooking.
 
That’s a great idea! Every time I make fish my wife complains about the smell.

I had too, no kitchen vents in my apartment..

U have a backyard propane grill, frying and searing may not get a cast iron pan hot enough, but these morning shows have celebrity chefs doing it that way. a 10” cast iron LODGE SKILLET only $20. @ target/walmart...
