What is it about it that it cooks differently than a regular griddle?
I once has a portable thermos grill that ran on camping size propane tanks and it was griddle style rather than on open flame and it was no different than cooking on a fry pan or flat top.....

It cooks the food on both sides at once. I think that may have something to do with it.

i have been very sick with severe sinus infection since last week. Finally saw doc Monday night and he put me on antibiotic for next week or so. I haven't had an appetite for over a week and lost 11 lbs. My friend Song found out I was sick and unannounced stopped by my house a few hours ago with a jumbo supermaket size grocery bag stuffed with all my favorites from his restaurant made by his son the head chef and Song himself. Beside sushi , other cold sides were made to my taste of a less fiery kimchi , pickled black beans and giant japanese radishes, sprouts, and soy eggs. Hot pan fried Pork and scallion Gyoza( Korean dumplings), Korean sticky rice and 4 piping hot quarts of 3 different soups. i devoured the entire quart of spicy hot and sour soup with vegetable gyoza floating on top, bamboos shoots, oyster mushrooms. i peeked at the other 3 quarts i put away for later.One looked like shredded beef with abalone, udon noodles, bok choy, black mushrooms, scallions. last 2 quarts look like korean chicken noodle soup with vermicelli, mixed veggies. Song said all the soups are spicy to help with my sinus congestion. After eating the kimchi and pickled japanese radish and scarfing down the whole quart of hot and sour soup without coming up for air, I say what congestion? A good friend is a rare thing. I am blessed.
