Just had some cheeseburgers made on the cast iron skillet. Man, I need to use the cast iron more often!! Side of beans and Mac n Cheese.

Pre heat oven to 400’ or so... sautee in olive oil, half of green and red pepper for a minute, then one large onion till soft, let pan cool... scramble 6 eggs in a mixing bowl wit some grated cheese... transfer veggie to mixing bowl.. reheat pan to high, add more oil in pan for flavor and classic frittata...
add eggs, veggies to pan wit spatula, even out, throw pan in oven till center is firm, 15 minutes + or - ... open door to oven and let kool down, keep da house warm... yum...

Guess doing it in the oven beats having to flip it on a large plate when making a potato and egg omelette
