i love spanish style roast pork.. “PERNIL”. i like to make here in the apartment, but it would smell the house for a week, can’t do… so easy too, $2.50 pound…

so simple: fresh garlic cloves, oregano, red pepper flakes, black pepper, salt, cilantro leaves, some cumin perhaps, onion powder/ chopped onion perhaps…
in a bowl mix wit canola oil, make a semi paste, wit knife , make holes in the shoulder all around, be generous… stuff holes with spices using the middle finger naturally….
let sit in fridge 24 hours at least, roast at 250’ for 4-6 hours, enjoy… cellie…
