Please post the recipe
Pretty simple really
First make a rub with fresh chopped garlic, thyme, rosemary, salt, pepper, olive oil.
Rub that liberally on the meat the night before cooking and wrap it in plastic wrap and put in back in fridge over night
An hour before cooking take it out and let it sit

Put in oven at high heat for 1st 20 minutes
Lower the temp and keep cooking til u hit 120 internal temp
We use a digital thermometer with a probe in the meat wired to thermometer that sits on counter

when it hits 120 take it out and tent it under foil and let sit for 15-20 minutes before cutting

Stupid question. What do you consider high heat and low heat?
 
We've made 5 or 6 of them over the last couple of years this way with good success
Obviously the actual cooking time depends on the size of the piece of meat.
The remote thermometer probe was worth every penny so you can get a fairly accurate temp reading while its cooking.
I use it while smoking pork butts or shoulders too....
