Tuesday will be a deep freeze so I'm thinking about making some "Chowdah" of the New England variety.

Even though my family used to make Manhattan all the time, I was never a big fan. This AM I happened upon James Beard's very accurate description of it as a vegetable soup that accidentally had some clams dumped into it. That is SPOT ON IMHO!!

Off to the local store to grab some heavy cream and 1/2 & 1/2. Over the years I've scrupulously "titered" the proper ratio of heavy cream to whole milk for NE Chowdah from 100% heavy cream/0% whole milk to 25% heavy cream/75% milk. Nope never even considered 100% whole milk and 0% cream.

Roccus Labs considers 75% heavy cream/25% whole milk as the sweet spot, which translates to 50% heavy cream to 50% half & half, and NOT the Non-fat version...
