Pan Seared Lamb Burgers with Feta Cheese
Black Truffle Oil Fries with Parmesan

Lamb Burgers with Feta Cheese

1 pound ground Lamb

1 Teaspoon Thyme

1 Teaspoon crushed Rosemary

1 Teaspoon Cumin

¼ Teaspoon Fennel

Garlic Powder (couple of shakes)

Kosher Salt (for searing)

Olive Oil (for searing)

Bunch of Feta (hold some for topping the finished Burgers)

Cast Iron Pan or equivalent

Mix all of the above together in a large bowl except Salt & Olive Oil.

Form Burgers

Brush finished burgers with Olive Oil & sprinkle on medium amount of Kosher Salt (both sides)

• Kosher Salt will create a crust on the burger when fried/seared
• Olive Oil is to prevent the burger from sticking to the pan

Brush pan with olive oil & heat it up. Cast iron under medium flame warms quickly. Test if ready by sprinkling a little water on the pan. If it sizzles – it’s ready.

Turn heat down to low/medium low & place burger into the pan.

Sear for 4 minutes on each side – not lifting the burger off of the pan surface. You can slide it after 2 minutes or so to make sure it moves freely .

Serve Burgers on a bun of your choice (I like Toasted Sandwich Thinns) – top with Feta – enjoy.

NOTE: this is my recipe & I'm still working out the spice levels
