Lemon-Oregano Roasted Chicken Thighs with Broiled Feta (been looking at this one for awhile now)
Roasted Farm Fresh from The Market this morning Carrots & Delicata Squash roasted in a Garlic/Basil Vinaigrette
Rice Medley with sauteed C?herry Tomatoes
Fresh Oregano over all (also from the Market)

Things I Learned:
  • Feta Cheese doesn't melt in the tradition sense - it softens (cause for what appears to be over cooked skin on the thigh)
  • don't trust your temperature probe too much (2nd cause of skin appearing over cooked)
  • when the recipe says do not disturb the checken while searing - disturb it
  • make sure the broil feature on your oven actually broils - for whatever reason my didn't - had to transfer it to the air fryer

Otherwise tasted quite nice, I will have to try this again paying attention to the aforementioned.

Done died and gone to heaven. Back in August a fellow striper nut clued me in on the fact that the local wood-fired pizza joint did proper, boiled first then baked, bagels on Sunday morning. We avoid Town like the plague on weekends until after all the tourists leave, but now that they're gone, I decided to check the bagels out this morning.

The wait was worth it, as I brought home a baker's dozen of culinary ecstasy, proper bagels with a soft, moist inside, covered with a crispy, yet chewy crust. Looks like I have a new Sunday morning ritual...
