Looks excellent. Have not made stuffed eggplant in a while.

i never cook classic eggplant parmigiana here at home, too much frying… i usually pick up eggplant at any market wen it looks fresh & firm at around $1.50 / pound - + … cellie…

First dredged in mayo and mustard, then two types of seasoned bread crumbs. Sautéed spinach, onion and garlic and a baked potato on the side
