I’ve never pickled any veggies, but I think the main ingredient used is vinegar. With fish, it’s salt.Thanks. Since I usually don't eat fish,.. uh,....
OTOH, I'm sure the processes are similar.
There's lots of recipes in the book. Radishes, eggs, and one that is close to my heart, red cabbage.
Mom made the most awesome Sauerbraten, and I'm bent on translating her recipe and trying to recreate it with homemade ingredients.
I'm going to take a crack at it, and let you all know how it goes. Plus, since I'm pretty incompetent in the kitchen I'll be looking here for support.
Also, like most things in my life, it's going to go with the ebb and flow of events and free time. Fair warning, since I know you all hang on my posts. It may take a while.
I make them every year. Except for the bread &butter chips I made this year I haven’t made any I love. I did two jars of cold pickles last week. I will taste test them today just for you.Tomorrow's Menu...
For my birthday Mrs. Avenger gave me a pickling kit. She had assembled a collection of typical ingredients like mustard and coriander seeds, sea salt, a package of pickling spice, some Mason jars and a recipe book.
Today we finally took a crack at it. Went to the farmer's market and picked up some Kirby cucumbers and attempted a cold pickling recipe. Ironically, not from the book, but the innerneck. They're supposed to be ready tomorrow. We'll see.

Obviously, the first thing we learned is we need a lot more cucumbers. But they say the brine is reusable. If these don't taste vile we'll be back at the farmer's market next Saturday to buy a butt-load of Kirbys.
Anybody else have any experience with making pickles?
Got it. Thank you.Avenger I sent you a PM

Awesome, I will definitely try thisWell, yesterday's tomorrow is today, so it's on tonight's menu. They said 24 hours in the fridge, we tried them out and deemed the pickles a success. We possibly could have used a little more dill, but otherwise they were crispy and had a nice vinegar bite. Gotta hit the farmer's market again next Saturday and pick a peck of pickling cucumbers.
If anyone wants to take a crack at it we got the recipe from Once Upon A Chef .com titled Quick and Easy Refrigerator Pickles.
