Scallops look perfectly prepared

and they were incredibly good........................

Large Dry Pack Seared Scallops served on dollops of Roasted Leeks and Cauliflower Purée made with Heavy Cream, Truffle Oil and small areas of Spicy chili sauce for dipping. Finished with a Corn Salad, Lemongrass Slivers and grated Leeks.

I don't normally order sea scallops - can be sometimes bitter - have always gone for bay scallops - this looked so good I had to try it - changed my mind about sea scallops (at least their sea scallops)

In my neck of the woods it’s impossible to get Dogs with natural casing, everything is skinless. I miss the texture of the snap.
