Everything was just amazing, but a bit bittersweet that few folks really enjoy clams and oysters from truly ice cold water (as soon as the tide stopped, skim ice started to form). There is no doubt in my years of eating these tasty bivalves, the colder the water, the tastier the mollusk, especially oysters. I'm so spoiled that I don't even consider any oysters on the half shell south of the Great South Bay, and I won't touch oysters from MA - NY if they weren't collected between Nov - April. I used to chop through the ice of Conscience Bay to collect my oysters during my time on LI.
Here's a good test for you oyster experts. All of the oysters in the photo are the classic American Oyster, Crassostrea virginica. There is a single European Balon oyster, Ostrea edulis. I figured I'd bring one home too, but I'm still not a fan. These oysters have a flinty, almost tin can taste. Nothing wrong with them, just a different taste.
So who can find the odd oyster???
