SHRIMP ? TIPS...

I de-shelled da shrimp and placed shells in pot wit a quart of water or two...

Bring to boil wit bay leaf and some peppercorns for 20-30 minutes...

add shrimp and shut off heat, let shrimp cook in hot broth, for 10-15 minutes...

Shrimp absorbs more flavor sitting in broth without getting tough from da gentle cook,. Serve as desired...

Save strained broth for a simple soup, add veggies and shrimp, cod, chicken...

add shrimp broth to start rice...

Exactly! And if the broth is actually warm instead of hot, the shrimp will not curl up.

broth freezes well, I place that batch in wit my spaghetti dish, it loosened it nicely...

I do same wit chicken cutlet trimmings... cellie...

After losing over 50 lbs since March and keeping all of it off for the past month, I said "Screw the salad!!" last night for my birthday and grilled up some veal chops and topped them with garlicky Shitake mushrooms with a green bean w/sliced almonds side.

The Shitakes came from some friends who took the time to cut down an extra Oak Tree and introduced spores into a chunk of it last fall. They were beautiful, forgot to take a "Before" shot.

Dinner was fabulous, but I'm not looking forward to today's "weigh in"...
