Yes slow roasted at 250 for 8 hours under tight foil cover
Then let rest for 30 minutes or in this case over night as it came out so late

then into a 550 plus over for 30 minutes to crisp the skin

I’ll sear again on a blazing hot pan later and make a sauce out of the root veg n pork drippings from the pan at service

da general is very observant, it was one sponge female, released… the Chinese use fishing poles near da Brooklyn bridge… big Jimmy Blues… they use a homemade spider type hook & bait… cellfish…
