So I was having some hiccups running around 2000/3000 Rpm, and it wasn’t all the time. But enough to get me thinking of an issue after some basic insight still wasn’t happy. So I decided to rebuild the carbs. What a world of difference.

Between all of my friends with two-strokes there's at least one set of carbs going through my parts washer every season. Easy to do, and as you said, makes a world of difference.
 
I don't know how much art. Not to take anything away from your friend, but these carbs are pretty dirt simple. Honestly, that's one of their best features. It makes them super serviceable and reliable. But they sure ain't Quadrajets.
 
I used to be a real tuner when it came to modding Quadrajets for performance engines. Back when I owned my Snap-on route I did all my gear-head clients’ carbs. None could believe they didn’t “need to upgrade” to a Holley in order to get their rides to really step out.

“Holley? We don’t need no stinkin’ Holley.” LOL!

But ironically, my boat’s Ford H.O. motor uses what? A factory-installed Holley.

Quadrajets are, IMHO, the best street carburetors ever made, and they're not too bad on the track either. Biggest problem with them was a lack of parts support for tuning.

Ford loved Holleys, but they came to some truth occasionally. And if anyone doesn't believe, there were a number of 429 Cobra Jets in '70 and '71 that sported,.... yep,.... Rochester Quadrajets handling the mixing.

If Ford is buying carburetors from GM you know they've got something good going on.
