If you are going to make your own, peel, then grind the root with just enough water for the right consistency, then let it stand for a few minutes to let the heat build from exposure to air, then "quench" that reaction with vinegar and add a little salt. If you enjoy tears, the waiting before the vinegar is key. If you're not going to make your own, this stuff is pretty good:

When using the food processor, I avoid adding the vinegar in the blender, I think the vinegar reacts with the metal blade, so I like to empty the horse radish from the blender into a non reactive bowl (glass) and then add the vinegar & salt... cellfish...
