So to keep with a shrimp theme......

I often receive a 5lb box of white pacific shrimp. If for shrimp cocktail, defrost, boil water and add salt. In the interim I take a bowl of ice and crush a few lemons for its juice over the ice and set aside.
Boil (with shell on), and not for long, strain and put hot shrimp over ice. The ice stops the cooking process. Add water until all covered, and refrigerate. Don't think about touching until next day! LOL . Peel and serve the next day. Nice and plump and with the hint of lemon. Dunk in sauce or eat plain.

If using the shrimp for cooked dishes, peel and proceed. If so desire, boil those shells with chunks of onion, garlic, and whatever additional seasoning you desire. Even Old Bay! :ROFLMAO:
20 minutes, strain ( I use cheese cloth) and now you have a great base for the next cooking adventure. Freeze any left overs.
