If there's one thing I miss the most about not being around the NY/NJ/CT Tri-State area it's PIZZA. Picture yourself 27 years in Chicagoland where they feel that the casserole called "Chicago Style Deep Dish Pizza" is proper pizza. Well what does a good NY Italian Boy do??? He learns to make his own. Although we do have "passable" pizza here, I still prefer the pizza at Cucina Roccus and tonight we're having "Saws-eech, Onion and Olive Pizza"...

Dom, u lived in Chi-town?? I was there for a couple of years mid 2004/5. Besides work, I loved the deep dish and Italian beef!! Gino’s Was good downtown and Portillo’s.

Deep Dish IS NOT pizza, it's a casserole. Pizza was invented in Naples as a meal on the run you could eat with your hands. I defy anyone to eat Chicago Style without a knife and fork and instead of the normal 15-20 min wait for a pie, these things take close to an hour!! Furthermore, Chicago Style is a geologist's delight. It's a culinary sedimentary rock formation with no mixing of the layers. WTF puts sauce on TOP of a pizza which means the cheese layer prevents the sauce to mix with everything??? And the final nail in this so called "pizza's" coffin is the fact that although it was "invented" by someone who's surname ended in a vowel, that "I" was preceded by an "S" and a "K", true story. Call it a casserole, fine, but DO NOT call it pizza!!

Yes, Portillo's Italian beef was top notch!!
