Whats on tonights Menu

Settled on these knives after my favorite cut it’s last meal. Although my brother claims he can build a new handle. We shall see. Picked up the 8 inch, loved it so picked up the 6 inch. Handle is rounded rather than squared. 3rd picture shows the older more square handle. Tighter grip and pay attention so it does not roll!!

On the ribs, 12.00 and NOT graded meat - No mention of prime, choice, or select. So probably standard.

LC, ya gonna use some hickory chips wit that charcoal… a lot of oak on the island ain’t ya using wood…

I still have carbon steel pans to unpack and prep for use in the new kitchen. Have to boil water to just get the beeswax off they use for transport so they don't rust.

Apple or cherry wood for chicken. Hickory for pork. Usually chunks.
 
do a taste test some time, hamburger on separate skillets… let us know…

i loved making salmon on a oak grill, in my hamptons bays backyard…

and 3 pounds of fried calamari by myself from CorJ… cellfish… lol.

So far steaks in this have been phenomenal. But this is stainless clad. Next step in the carbon steel. Not hard. Just need to put the hours of cooking in. Like cast iron, the more you cook, the better the pan becomes. And maintenance is key.

Little bit on a paper toweling.
Wipe it down.
Let it sit overnight.
Wipe it down again before puting it away.

When I was at the boat show this past weekend they had a knife dealer there so I went and talk to him. I asked how much for the lodge that which included about 14 different knives. It was $4000 I said have a nice day I’ll talk to you later.

how are they?

I've kinda been looking at that brand for cookware - right now I've got a mish-mash of pans - many I'm not happy with. Typical single divorced guy cookware.
